    I'm assuming the 1800kcals are from a cut, so I would gradually increase calories to maintence then bump them up slightly and weigh yourself on a monthly basis to asses weight gain.

    I would bump it up to 2300kcal with 160gpro/300g carbs/ 64g fat. Also try to incorporate a PL routine if you're worried about strength. If you would like to tackle both then I recommend Layne's PHAT program.

    I dot think it was have a very significant role. I agree some protein sources are inferior, but if you're getting enough the amino acid content may not play that much of a role. This is excluding sources that aren't technically a complete source.
