Tuna Salad Primavera... Good stuff just tried it

[SIZE=+2]Tuna Salad Primavera[/SIZE][SIZE=+1]Prep: 10 min, Cook: 10 min.[/SIZE]
  • 1/4 lb. tiny shell pasta
  • 1 red bell pepper\raw, seeded and cut into thin strips
  • 1 carrot\raw, thinly sliced
  • 1/4 lb. green peas\raw, thawed if frozen
  • 2 scallions, thinly sliced
  • 9 ounces canned Albacore tuna, packed in water, drained and flaked
  • 1/2 cup fat-free Italian dressing
  • 1/2 tsp. salt (optional)
  • 1/2 tsp. pepper
Cook pasta in boiling salted water about 8 minutes or until al dente. Drain. Rinse under cold running water. Drain thoroughly. Combine pasta with remaining ingredients and pepper to taste in a bowl. Toss and serve.

Whole wheat pasta of course. (c: I tried something very similar with whole wheat pasta a while ago, very yummy. Tarragon is a good spice to add to any primavera dish. It's strong though, so sometimes it pays to just sprinkle some in with the pasta as it boils.
