Tex mex Chicken

Makes 4 Servings
Ingredients

o 4 chicken breasts (boneless, 6oz each)
o 1 cup of Salsa
o 1/3 cup of low-fat cheddar
o 1 tbsp of olive oil
o 1 teaspoon of garlic
o 1 teaspoon of Chili Powder
o 1 teaspoon of Basil
o 1 teaspoon of Oregano
o 1 diced Green Bell Pepper
o 1 diced Red Bell Pepper
o 1 teaspoon of Lime juice
o Salt and Pepper

1. In a bowl, mix the salsa, olive oil, garlic, chili powder, basil, oregano, lime juice

2. Cut up chicken. Place the chicken and diced peppers in the mixture, cover and marinate in the refrigerator 8 hours or overnight

3. Place chicken mixture in aluminum foil, create pocket, add some of the marinade to keep moist and cook for approximately 30 minutes at 350 degrees F.

4. Sprinkle with cheddar cheese before serving

Sounds friggin awesome, I'm gonna try it this weekend. For a quick easy meal durin the work week for just me and the old lady I take 2 chicken breasts and put them in foil bent up into a bowl and cover them with Pace picante sauce, pooring some under them too to make sure theyre covered, and then top with whatever shredded cheese I have, and put in the oven for 30 min at 350. Not as many flavors as yours, but in a pinch I like it.

Well the recipe seems sound and although i have not tasted it but i am sure this might be really useful for me . I would be able to post my comments until i check it out . Thanks
