Salmon Broccoli Fishcakes

Ingredients:

1 Salmon Filet (about 85-100g)

1 Cup Broccoli

1 tsp Garlic

Juice of 1/2 Lemon

1/2 Cup Egg Whites

2 Tbsp Mayo (I forgot the mayo in the ingredients picture but I use the Hellmann’s brand)

1 tsp Ground Ginger

Salt and Pepper to taste

Cheese for topping (optional)


Directions:

1. Cook salmon and steam broccoli

2. Combine all the above ingredients in a bowl and mush together with a fork (I used my hands to break apart the broccoli and salmon into bite size pieces first)

3. Place mixture in fridge for about an hour to let set

4. Pre-heat oven to 350 degrees

5. Form mixture into 3 patties and bake at 350 degrees for 8 minutes and then turn to broil for an additional 5 minutes

Note* If you are adding cheese, add it before broiling!

6. Place on a plate and enjoy!
