Natural animal fats (saturated) are NOT bad for you as long as you don't eat them with large amounts of carbs. Beef, bacon fat, coconut oil etc. will help you achieve ketosis quickly (1-3 days). I would shoot for 60-70% fats, 5-10% carbs and the rest from protein. I am also doing the CKD diet and having great success.
Think bacon, preferably not treated with nitrates or nitrites, fatty beef, whole eggs, wild caught fish, fish oil, virgin organic coconut oil. The first day or two keep your fats closer to 70% and the rest protein until you are in ketosis.
I don't know how active you are outside of the gym but 2000-2200 calories a day is a good start. Some may think this is two low and if it is for you just bump it up slightly until you are in about a 500 calorie deficit.
