    Sourdough Bread


    We all know Whole Wheat is the way to go, but I was wondering if Sourdough Bread is good for you, or a least not bad. It has a glycemic index of 50, which is LOWER than whole wheat bread, so it's a little confusing. What are your thoughts.

    In the context of a balanced diet of reasonable quantity I can't see the difference in GI making any significant difference.

    If you like it, then eat it. Just factor it in appropriately.

    I remember reading something about the enzymatic process of sourdough lowers the GI.

    Yea, its GI is actually lower than whole wheat, thats why I was wondering.
