How do you make your breasts exciting? chicken that is...

I have been eating chicken breasts for I don't know how long now and have always been pretty good about making chicken and rice not so borring.

I normally buy the $14 frozen bags at Cosco each containing about 14 good size breasts. I then cook 6 or more depending on if I am cut, maintance or bulk, and put them in a gallon bag with Lawerys lemon and pepper marinade. It's a good general all purpose flavor.

I wanted to see what you guys do to liven up up your chicken meals. I will start:

Staples for all meals include chicken (duh), always brown rice and then brocolli for a veggi.

House of Tsang Peanut Sauce 1Tbsp (46 Cal) (2.5gFat) normally use total of 2Tbsp
Tabasco Chipotle sauce
Soy Sauce (low sodium)
Salsa add black beans minus broc.
Garlic Chili sauce - forgot brand name - super spicey ... but damn good.
Used from a co worker - Mild and Hot Taco Bell hot sauce packets

Those are the main ones... what do you do?

My favorite way to eat my grilled breasts is in a bowl of spinach leaves with Newman's Vinager and Oil dressing sprinkled with garlic and crushed red pepper.

Alongside a sweet potato with some Frank's Hot Sauce also kicks some serious ass!!

I like my chicken blackened with some cajun spices on the grill or George Foreman. I think the spice I have now is called "Bourbon Street", but I use whatever is spicy.

I also had chicken covered with two slices Canadian bacon and some fat free cheese. Very nice with a sweet potato.

Lean Ones' Teriyaki Chicken.

Start by cooking the rice of your choice. ( I like basmatti)
Take the breast and dice it up into bite sized pieces.
Put the chiken chunks in a bowl and add 1 to 2 tbs of roasted sesame oil and about 1/4 cup of teriyaki marinade.(mabey less)
Mix it all up so the chicken is well coated with the teriyaki oil mix.
Get a frying pan or wok real hot.
throw the chicken in and stir fry til it's cooked to your liking. (it doesn't take long)
When ready, dump everything in the pan over your pre determined amount of rice.
Ad more teriyaki if desired.

Mmmm Mmmm good.

I also know an easy peanut butter chicken recipie but I don't have time to get into it now. If i get requests, I'll post it when i have time.

I first tenderize the chicken with one of those hammers (I highly recommend this), then put them in a big ziplock with some Lawrys garlic and herb marinade or just regular Italian dressing.....let it marinate 24 hrs.....bake in oven.....eat.

Yeah..! lol. If i'm real lazy, i just dump some breasts in the microwave and eat em with PB.. mmmmm! But its dude.. remember to go easy on the PB!!

Best Damn Chicken Ever Period (Tom Arnold Says So)... You Gotta Try This

1) Preheat over to 400 while chopping up some white or yellow onion. Also needed are sliced mushrooms.

2) Sprinkle both sides of chicken with Garlic powder, onion powder, Tony Chachere's, parsley and black pepper. Also add 1 small tablespoon of margarine as well (not much fat here)

3) Cook in a pan covered with foil for 20 mins. Assures chicken will be moist and allows "juices" to accumulate.

4) After 20 mins remove foil and smuther the tops of the breasts with the chopped onions, sliced mushrooms and more parsley.

5) Cook for an additional 20 minutes (until chicken is done) uncovered. Make sure you baste the chicken/onion/mushrooms with the juice once or twice.

And there you have it .... Best Damn Chicken Ever Period.

You might need to slightly adjust "uncovered" cooking time; don't let the chicken dry out.
