I have been taking jack3d now for 12 days, and I was wondering if I should go ahead and take it every day or only on the days I work out?

IMO, Only the days you workout, or you will build up a tolerance to it.

don't waste it on the days you don't work out, you will build a tolerance and the awesome effects will diminish that much faster. You want energy on off days get some cheap caffeine pills or something, don't waste your jacked.
