How come one test enanthate is a yellow piss colour. and the other one is like water with a very slight tint of yellow ?

Both made the same time. both start and end dates are the same ? same company ?

Why is this ?

could be different oils used. Grapeseed oil is very clear, while sesame is somewhat darker.

Ask your source.

If it was produced underground, some suppliers will bake test at approximately 200-250 degrees for a couple rounds of ten minutes to mitigate any prokaryote microorganisms; this has always darkened my test and tren-acetate while doing the conversion. Perhaps one of the bottles became contaminated on accident during conversion... or it could also be the reason below (I use grape-seed, but many others use cotton seed).
