Chicken Parmesan at 300 Calories

Cookie Sheet
Non-stick spray

1lb of boneless skinless chicken breast, with fat trimmed
1 tbsp of Garlic
1/2 tbsp of Black Pepper
1 1/2 c. of Tomato Sauce
1 slice of mozarella or provolone per piece of chicken (reduced or full fat)
Parmesan Cheese (if desired)

Heat your oven to 375 degrees. Combine the Garlic and Black Pepper together. Rub the garlic and pepper mixture over chicken. Once the oven is heated, put the chicken in the oven on the cookie sheet for 20 minutes or until thoroughly cooked through. Remove chicken from the oven once fully cooked. Spoon tomato sauce over the top of the chicken. Sprinkle parmesan cheese over the sauce, then top that with the mozarellla or provolone. Put back in the oven til the cheese has melted.

The only carbs in this whole recipe are from the sauce. Figuring youll get 3 chicken breasts per pound or so....

Oh yes, this is a staple in food excellence!
I use a baking pan and dump the whole can of sauce in, I also like onions in my sauce. Diced zuccinni is also good in this.

I serve it over a bed of whole wheat spaghetti.
