Apricot Glazed Ham
64 oz. ham
16 fl. oz. ginger ale
1/2 tsp ground ginger
3 tbsp dijon mustard
1/4 cup brown sugar
2/3 cup of apricot, apricot jam
20 small cloves of garlic
01. Score the surface of the ham, making diamond shapes 1/4-inch deep. Insert a clove in each diamond. Place ham on a rack in a shallow roasting pan. Pour ginger ale into pan.
02. Loosely cover with foil. Bake at 325*F for 1 hour.
03. In a small bowl, combine the apricot fruit and jam, brown sugar, mustard , and ginger. Brush some over the ham.
04. Bake, uncovered, for 1-1/2 to 2 hours or until a meat thermometer reads 140*F and ham is heated through. Brush occasionally with the glaze. Serve with remaining glaze.
