Stuffed Bell Peppers

Made these tonight.


1 lb. lean ground beef
1 medium onion
1 Package of Uncle Bens "90 second" whole grain vegetable harvest rice
3 large green bell peppers
15 oz. can of tomato sauce
4 tbsp honey

Add beef and chopped onion to skillet. Brown and drain. Nuke the rice then dump it in the cooked beef and onions. Open can of tomato sauce and add 4 tbsp of honey. Mix it and dump it into the pan with the beef and rice mix. Toss it around until everything is mixed. Cut open the bell peppers, then fill with the beef mix. Bake at 350 for about an hour.

I love those things. My mom used to make them when I was a kid.

I do something similar to this but use poblano peppers and grill the peppers for a few minutes before stuffing and baking.

is there a low carb substitute that you could use for rice that anyone can think of? btw definatley gonna try these
