veggie patties

I just started making these things and they are great.
1 yam
2 zuccini
1 butternut squash
2 large carrots
flour
1 egg
grated parmesean
Grate all the veggies up with a cheese grater, mix together and pat dry with a paper towel. add 1/3 cup flour, egg, 1/3 cup parm and mix it all up by hand. Form into patties like you would with burgers. Lightly coat a pan in olive oil and sizzle these bad boys up. They are AWESOME!
