what you need:

medium/large sweet potato (3p/45c/1f)
1/3 cup oats (2/18/1)
1 scoop vanilla or chocolate protein (25/1/0)
ounce almonds, or pecans, or walnuts (6/6/16)
4 egg whites (14/0/0)
total: 660 cals, 50p/70c/18f

microwave sweet potato on high for 7-10 minutes or until nice and soft throughout. Split open and remove the goods from the potato and mash into the bottom of a pyrex dish (use non stick spray!)

-in a bowl combine the oats, protein, egg whites, and nuts. Mix around until everything is coated...may have to add a little water to get it all mixed together.

-pour mixture over the sweet potato and top with cinnamon and splenda

-bake at 350-400 degrees for 30-45 minutes or until the crust is nice and crispy! I will often use the broiler for the last few minutes to get the crust to perfection.

additional topping could be some of waldens farms calorie free marshmellow topping or syrup or cool whip lite or whatever you feel like!!!:woohoo:
