Old Fashioned BlueBerry Muffins

Pulled from the back of the Splenda box with a couple of substitutions:

1. Oat flour for all-purpose flour
2. Unsweetened applesauce for light margarine
3. Use egg white only for one of the eggs

Ingredients
2 cups oat flour (alt. 1 1/2 c oat flour, 1/2 c unflavored whey)
2 tsps. baking powder
3/4 tsp salt
1/2 cup unsweetened applesauce
1 cup Splenda
1/4 cup honey
1 whole egg
1 egg white
1 tsp. vanilla
1/2 cup skim milk
1 cup blueberries, fresh or frozen

Steps
1. Preheat oven to 350 F.
2. Line 10 muffin cups with paper liners.
3. Sift together flour, baking powder, salt; set aside
4. Beat together applesauce, Splenda and hony with electric
mixer until light and fluffy.
5. Add eggs ona at a time beating well after each addition.
6. Stir in vanilla.
7. Alternately stir in oat mixture and milk, beginning and
ending with oat mixture.
8. Fold in berries.
9. Spoon batter into paper lined muffin cups and bake until
golden brown or inserted toothpick comes out clean,
about 25-30 mintues.
10. Cool in pan 10 minutes on wire rack.
11. Remove muffins from pan and cool completely on wire
rack.

Add one of these to your morning coffee!
