Preheat small cast iron add some extra virgin oo
Add 1/4 onion
add 1 clove garlic diced then smushed
let brown and reduce
then in a bowl, 3 egg whites one yoke
small portion of sharp cheddar shredded before adding to hot pan
1/4 cup skim milk
s+p
wisk
and cook, touch as little as possible.
put it on a whole wheat bread, and if your crazy like me have it with a glass of oj to complete the meal.
I ate it faster and enjoyed it more then any other egg sandwhich in months, just by adding the onion and garlic while warming pan with evoo.
Yeah it's basic just thought I should share, because it tasted great and didn't take any time if you do things in order.
