Chicken Enchiladas (sodium restricted recipe)

Chicken Enchiladas
made with Southwest Chipotle Seasoning Blend


Ingredients
1/2 pound (225g) boneless, skinless chicken breasts
2 Tbsp. (30mL) onion, chopped
2 Tbsp. (30mL) green bell pepper, chopped
1/4 cup (60mL) light sour cream
1/2 cup (120mL) low sodium low fat cheddar cheese, shredded, divided
1 Tbsp. (15mL) Mrs. Dash Chipotle Seasoning Blend
4 small flour tortillas
1/2 cup (120mL) salsa, use divided
Vegetable cooking spray

Directions
1. Lightly spray a medium baking dish with cooking spray, set aside.
2. Lightly spray a medium, non-stick skillet with cooking spray. Over medium heat add chicken and cook for 5 minutes a side or until juices run clear. Remove chicken and cube, set aside. Add onion, green pepper, sauté for 1-2 minutes or until crisp tender.
3. 3. Remove from heat, add sour cream, two-thirds of the cheddar cheese, Mrs. Dash® Chipotle Seasoning Blend, and cubed chicken and half of the salsa.
4. 4. Place even amounts of the mixture into the tortillas and roll. Place in prepared baking dish and cover with remaining salsa, sprinkle with remaining cheddar cheese. Bake uncovered in preheated 350°F (180°C) oven for 15 minutes, let stand 5 minutes and serve.

Everything looks good on this one YR :) My only question though is on Tortilla's. Have you ever found some low card multi-grain tortilla's? I try to avoid the normal white flour type.

If your grocery store has an organic section, look for La Fuerza del Sabor tortillas. They have different flavors like jalapeno salsa, tomato, and a few others that are all low carb.
