I whipped this one up at a BBQ recently for some vegetarians that were there (NOT vegans); they were doubtful of it while watching me make it, but once they tried it, it was gone in seconds.
1 cup egg whites
1 cup chopped broccoli
1/4 cup Kraft Fat Free mozzarella
1/2 cup rolled oats
spices:
garlic powder
chilli powder
paprika
celery seed
curry powder
1) coat pan with no-calorie cooking spray
2) if you use frozen broc, then nuke it for a minute. if you use fresh, then skip to 3
3) add broc to pan
4) Add egg whites to pan
5) add garlic powder (coat it practically)
6) I add a good amount of chilli powder, the mroe you add the hotter it will be
7) paprika just needs a small amount
8) celery seed small amount
9) add a TON of curry powder, don't stop till the egg is coated in a dark yellow tint
10) add cheese
11) dump on the oats
12) using a spatula, mix everything up thoroughly. It's important to make sure everything mixes to ensure all the flavors soak up into the oats.
13) once everything has been fully mixed (the mix should look pretty even), serve it up on a plate
For folk like me, this is one serving. For normal people, it's like 4 servings. Here are the macros:
41g protein
31g carb (+10g fiber)
3g fat
Yes, you read correctly, only 3 grams of fat. Plus because it's a scramble, it works VERY nicely as a side dish with other foods. Just be aware it's best to serve this with other spicey foods because it's flavor is quite potent and can overpower.
During my contest prep, I used this as the first meal of the day. It's one contest prep meal that I continue to love no matter whether I'm dieting or not.
