Found this out the other day when changing things around a little for a day.
Ingredients are really simple.
1 cup FROZEN green beans
15 FROZEN cooked shrimp
1/2 cup old fashioned oats
chilli powder
garlic powder
paprika
Take the green beans and put them in a plastic microwaveable resealedable plastic container. put some chilli powder and garlic powder on them. Pour shrimp in. Add chilli powder, garlic powder, and paprika. Do so liberally. Lastly, pour oats on top and seal.
Let it sit in the fridge to "thaw". I typically do this overnight. When ready, microwave for about 1 minute and 30 seconds on high.
What you'll find is that the ice that was on the green beans and the shrimp when melted make the oats soak up the chilli powder, garlic power, and paprika. The result is fantastic. It's almost like an oat-salsa or something.
The macros on the meal are just about unbeatable too. I mean, it's ultra lean protein (shrimp have virtually no fat; 1 gram for every 18 grams of protein), very very low GI carbs, and plenty of fiber with some nice healthy green veggies.
The prep time is under 1 minute. Which is good because I prep all my meals for the on the night before. So I prep this, throw it in the fridge, then the next day pull it out and nuke it.
