This one's from Sara
After a few different attempts at making these, I think I finally found the right combo:
1/2c canned 100% pure pumpkin
1 scoop protein (I used CytoSport vanilla whey)
4 egg whites
Splenda to taste depending on how sweet you like them (I used about 2 tbsp)
Cinnamon and pumpkin pie spice to taste
Blend all ingredients in blender, let sit for a couple of mins while pan heats up. Set heat to low/medium (I have an electric stove and had it on setting 4...these can burn quickly if too high). Make into 2 pancakes to make baking and flipping easier.
Top off with spray butter and 1/4c sugar free syrup.
