1-Minute NO CARB made-in-microwave muffin

1/4 cup Flax Meal
(edit: "Blanched" Almond Flour tastes way better than Flaxseed)
1/2 teaspoon. baking powder
Splenda to taste (I used 4 packets)
1 teaspoon cinnamon
1 egg
1 teaspoon butter (I used Mac Nut Oil - Im sure it won't matter what type)

Put wet ingredients in cereal bowl. Mix well

Put dry ingredients in separate bowl. Mix well.

Add ALL the ingredients in cereal bowl, mix very well

Microwave
for one minute or more if necessary.


Enjoy

I've got bags of flax seed that I'm going through slowly. There's nothing else in flax meal aside from the seed right? I may try to grind some up with my coffee grinder and see how that substitutes.

Haha I hear ya, there was a closeout on bags of whole flax seed so I just stocked up.

Just made this. I know this is a NO CARB recipe, but I added in ~1 tablespoon of greek yogurt mixed with some Walden's Chocolate Syrup as frosting. After taking a bite, the muffin itself tastes a bit bland, but the slight sweetness of the 'frosting' pulls it together. Would have been nice if I had a mini muffin cup just for aesthetics. Overall, it tastes pretty good! Uploaded some pics too to show texture and thickness :)

Niiiice if you have anymore of these pls post them...my wife is celiac and loves **** like this

These sound and look really good, thanks for posting!!! Have always wanted to try the almond and coconut flour, might have to do that today:)

I may give this a go!

You could also try a protien brownie
IN a mug:
1 egg
1 teaspoon of olive oil
2 teaspoon of pure coco
1 scoop of protein powder
1 table spoon of natural peanut butter

Mix it thoroughly and put it in the microwave for 1 minute. if you like it a little runny try 45-50 seconds. It depends on the strength of your microwave though.
