EASY healthy Almond Butter Cookies! VERY LOW CARB

ONLY 5 ingredients!
1 Jar (16 ounces) raw/unsweetened ALMOND butter
2 cups sugar substitute like Splenda (LESS if you use Stevia/Xylitol/Erytritol)
1/2 cup egg beaters (or 2 eggs)
2 tsp vanilla
2 tsp baking powder (***ONLY NEEDED if you used egg beaters not REAL eggs)

1. mix ingredients in bowl
2. drop by rounded teaspoons onto cookie sheet
3. bake at 350 degrees for about 12-15 minutes

INDULGE in HEALTHY YUMMINESS!

You know how there is a bunch of OIL at the top of the jar (of ALL natty nut butter)?
I dumped mine. Not needed. Just an FYI

PS: I ate the whole batch in on sitting. :(

I imagine that sorta negates the beauty of making/eating a LOW CARB product LOLOL :p

Tough to estimate b/c the cookie size that you make will determine that

One Jar of Natty Almond Butter = 14 servings

224 Grams of Fat (60% Monounsaturated!!!)
98 Grams of Protein
34 NET Carbs
(68 grams fiber)

If you think about it this way, per the label, there are 14 servings so if there are 14 "servings" of cookies.......

16 Grams of Fat
7 Grams of Protein
2 NET Carbs
(4 grams fiber)

***Eggs and Splenda macros are trivial)

I made 34 cookies so each cookies so 2.5 cookies = one serving for MY sized cookies (good luck eating only 2-3 cookies! lolol)







Any idea on the macros for this?

I made them last night. I didn't want to make as many, so I used half of the ingredients amounts.

The cookies taste great, but they dont hold together well. They crumble really really easily.

Agreed. Not sure what to add/subtract to address this & keep them low carb

Maybe adding almond flour to the recipe would help keep it together.

I made a second batch tonight. I had picked up some crunchy organic almond butter, this time. I figures what the hell, it was the same price as regular. The consistency is a little more slimier, which seems to have made the cookies hold together a little better. I haven't eaten any yet, so I will let you know how they hold up.

I think the fat content of these might be lower if you're throwing all that oil away....

I've never tried almond butter before, but might have to pick some up now. Kinda of a dumb question, but would this recipe work with natty pb?

I enjoyed these cookies a little too much. The second batch I made was soooo good. I think the consistency of the organic almond butter help hold the cookies together bested and they tasted yummier.

I'm trying to keep a calorie deficit, and making these didn't help that at all. It created a surplus.

There's not enough binder another eggwhite or so with some flax meal should hold them together

Yep, I haven't made them in a while because of that. I'm trying to cut and I was eating to many of these.
