Makes 6 servings

Ingredients

2 lbs of ground Turkey
1 teaspoon of olive oil
1 diced Onion
1 teaspoon of Garlic(optional)
1/3 cup Dried Tomatoes
1 cup of Whole Wheat Bread Crumbs
1 Whole Egg
1/2 cup of Parsley
1/4 cup of Low Fat Parmesan
1/4 cup Skimmed Milk
Salt and Pepper
1 teaspoon of Oregano

Directions

1. Cook the Onion with Olive Oil separatly

2. Mix everything together in a big bowl, add the cooked oignons

3. Put the mix in a big pan

4. Bake at 375-400 F for about 30mins

Ingredients

1 teaspoon olive oil
3 cups broccoli
2 thinly sliced carrot
1 onion, cut into wedges
6 oz. sirloin steak cut into strips
3 tbsp low sodium chicken or beef broth
1 tbsp reduced sodium soy sauce
1 teaspoon whole wheat flour
1/2 teaspoon Splenda

Directions

1.Heat olive oil in a large skillet and add the prepared vegetables.

2.Cook, stirring until veggies are crisp tender and onions are browned. Put aside.

3.Stir in the beef strips, cook until desired doneness.

4.In a small bowl, combine the remaining ingredients, stirring to dissolve the flour; add to the beef mixture and cook stirring constantly until sauce thickens

Love this. Make it all the time. Substitute the bread out for 3/4 cup ground flax meal or textured vegetable protein nix the cheese and throw in some reduced sugar heinz ketchup and whamo!!! You have a great meal for even the most carb conscience consumer. Per serving is is around 1-2gr of carbs based on condiments added.
