Tried this a few times....actually pretty good. I added in 2 scoops of vanila casien protein for a better macro balance.
LOW FAT CARROT CAKE
1/2 c splenda brown sugar
1/2 c splenda
3/4 c prune puree (or applesauce or LF yogurt)
4 egg whites
2 tsp vanilla
2 ¼ c whole wheat flour
2 tsp each: baking soda, cinnamon
1/2 tsp salt
3 c grated carrots
1 c raisins
2-8 oz pkgs ff cream cheese or cottage cheese
1-pkg FF cool whip
Beat sugar, puree, egg whites, and vanilla.
In another bowl, combine flour, baking soda, cinnamon, and salt.
Add to wet mixture, blending well.
Stir in carrots and raisins.
Bake at 375 for 30-35 minutes
Frosting: beat together cream/cottage cheese with cool whip. (add 1-1.5 c powdered sugar for taste if not on a cut) and 1tsp vanilla until smooth and creamy.
