1/2 tbsp chili powder
1/2 tbsp black pepper
1/4 tsp salt
1 cup Lite coconut milk (Thai Kitchen)
1 tbsp olive oil
2 skinless,boneless chicken breast
3 tbsp lemon juice
2 tbsp Cilantro
1 clove garlic chopped
1 can mushrooms drained
1 cup onion chopped
1 1/2 cups tomato products,canned, puree, with out salt added
1 cup tomatoes chopped
Saute chicken,onions,and garlic in olive oil.
After chicken is cooked, add tomatoes,mushrooms,and cilantro. cook until tomatoes are soft.
Add coconut milk,tomato puree,lemon juice,and spices.
Simmer for 10-15 minutes. serve hot.
TIP:
serve over brown rice or eat as soup.
