I decided to take a clam chowder recipe and modify it. This has turned out to be a thinner version of clam chowder (more of a soup texture), with a few additions and other changes. While it is high in fat, the fat is majoritively healthy.
1 Yellow or Orange Bell Pepper, finely chopped
1/2 Small Onion, finely chopped
1 1/2 Tbs Organic Butter or Olive Oil
3 C Milk and/or Half n' Half
1/2 tsp Oregano
1 tsp Pepper
1/2 tsp Salt
1 6oz can of Clams
Optional: 2 spicy sausage, cooked, drained and chopped.
Saute bell pepper and onion in the butter or olive oil until they are soft (about 5 minutes)
In Medium saucepan mix milk/half n' half, oregano, pepper, salt, pepper, onion and entire can of clams (including juice). Heat on low until hot. Avoid boiling.
It is all ready to serve. Place chopped sausage in your bowl of soup and enjoy!
