  1. Keto Nog- Cream Substitute?

    Well, based on the following recipe:

    "Christmas Eggnog

    12 egg yolks
    5 cloves, whole
    4 cups milk
    4 cups cream
    1+ ¾ cups sugar
    2+ ½ teaspoons vanilla essence
    1 teaspoon cinnamon, ground
    ¾ teaspoon nutmeg, ground"

    I have created an alternative.

    15 Whole Eggs
    5 cloves ( if my friend has them)
    5 cups protein shake (I use's DC Mix, vanilla cream flavor. 28g protein per serving, 0carbs, 0 fat. Mixes great.)
    Cream replacement: Your choice of
    A. Coconut Milk (1 14 Oz. can has 900 calories and 13g net carbs)
    B. Coconut Cream (~6g net carbs, 500 calories for a 200g box)
    C. Naturally More Peanut Butter (2 tbsp is 155 cal, 11g fat, 10g protein, 4g carbs)
    I am leaning towards 300 cal coconut milk and 300 cal NMPB.
    Wal-Mart Altern 2 Cups (~0 calorie sweetening alternative)
    Miscellaneous spices (above + 100% cacao )

    I just can't feel comfortable downing 180g of milkfat and all of that unhealthful sat. fat.

    Without the cream substitute, that's
    69g fat, 207g protein, 6g carbs, 1500 calories.

    My question is:

    Which of the cream substitutes should I use?
    How much should I use?

    I'll be experimenting tomorrow with 1/2 cup coconut milk and 6 tbsp NMPB. :bruce1:

  2. There's a product called mimic creme, unsweetened, which I really like.
    i use FF half and half and add a little guar gum, or eve a little sf ff vanilla pudding for a cream substitute.
