| Nevernude Rep | Icelandic Skyr (kinda like yogurt) I just found this stuff called Skyr. It seems pretty interesting (I'm gonna start the process of making some tomorrow) The carbs are a bit high, but it might be a good snack when I'm feelin' some carbs. Here's some info on skyr: Skyr is a non-fat milk product that has been a component of the Icelandic diet since the 11th century. It was the food of Vikings, and has since been one of the most popular foods in Iceland. It is rich in proteins and vitamins, while at the same time low in calories, and is served in a variety of ways. It has a soft and creamy consistency and is often served with a mixture of milk and cream, like sauce on a pudding. (Food-Info.net : What is skyr?) When someone who is open to trying many flavors (bad or good) and is trained in the culinary arts, reacts like that to a food, it definitely is not something I will be ingesting. | Kick ass Redİ #74!! | I only had it once. That was enough! My grandfather made it. He was 100% Norwegian. Came here from Canada and became a citizen. I remember him cooking lefsa on a griddle. Now that was pretty good stuff. Kinda like a potato based tortillia. |

| I Know Nothing!! Board Moderator | Mmm, I miss Lefsa. Lutefisk..ehhh..notsomuch. My grandpa was a Norweigan dairy farmer in WI. The skyr sounds a lot like kefir which is another fermented, quasi-yoghurt milk product. I would make it, but I hear it's best to use pure, unhomogenized milk which is hard to get due to the legality. I AM watching you. Pirate, Poet, King of Despair. |

| Registered User | You can get Raw, unhomogenized milk here in California, it's just expensive. I'll have to look into making my own Kefir, it's good stuff.
