Questions about how preperation affects the GI value of carbs

I don't know very much at all on what preperation does to the GI value of food. Any articles or any information that would tell me what toasting bread, or microwaving broccoli or grinding up broccoli into liquid form, or boiling Oats does to the Gi value of the foods. So far I stick to raw fruits and veggies for my carbs but I would like to start eating other types of carbs.
