I'd be interested to know more about how he observed the effect of different food combinations on his blood pH. I do agree that your pH is important and you should eat to prevent it from becoming too acidic, but I can't say I felt much different on a similar food combining diet that limits what foods can be eaten together. It just added an unnecessary complexity to my life. I feel you can keep it simple and add fresh "green" food to any meal to balance out its acidity.
Also, I know canned foods can have preservatives, but they often agree with my stomach more than fresh foods that I've prepared myself. I'm also a pepper and cinnamon fiend, I use them nearly every meal.
