Americans who eat lots of salads or raw vegetables have higher levels of key nutrients in their blood, according to a study of nearly 18,000 adults.
Researchers found that just a daily serving moved people closer to the recommended doses of vitamins A, E, B6 and folic-acid.
Unfortunately, few Americans regularly eat raw vegetables, said lead researcher Dr. L. Joseph Su of Louisiana State University in New Orleans.
Of 17,688, just 18 to 38 percent did, with blacks far less likely - a finding that the researchers call "alarming" in The Journal of the American Dietetic Association.
