Doube shot? Triple Shot? I actually know nothing about coffee type drinks.

Why the variability in espresso?

Because it is an agricultural product. Coffee beans have variable levels of caffeine depending upon type of bean, soil conditions, weather, type of roasting, etc. The other drinks are synthetic and largely standardized. Caffeine content can also be effected by type of espresso machine and how that machine is utilized by the barista (akin to different cooking styles).
