Palatinose is not transformed by oral bacteria (Streptococcus mutans) into acid, the result is that formation of caries-forming plaque can not form on the surface of bacteria, even when Palatinose is mixed with regular sucrose or sugar. Studies have shown that as long as a sucrose solution contains more than 50% Palatinose, the formation of plaque-forming glucan is effectively inhibited.
