Backpacking in Europe

Has anyone been backpacking in Europe. I would like for my wife and I to take a backpacking trip in Europe but dont really know where to start as far as booking, or if there is a travel agency that could help.

Please share the all the locations that you have gone too.

How much time do you have? A while back I came across a hike through the Spanish countryside that took a month. You stay in multiple villages throughout the trip, and of course you'll be camping under the stars other nights as well. I really wish I had more info for you as far as agencies that do it and whatnot. It sounded absolutely amazing. Something that I WILL do before my time here is over.
