what are your thoughts on food intake on non-lifting days?

currently I'm making good progress with

1.5g protein/lb (225)
2.0g carb/lb (320)
0.25g fat/lb (40)

I weigh about 156-158

It'd make it simple if I just eat the same thing on my off days, but it seems like I won't need the carbs because of the lack of training. However, I'm sore all over practically on my off days, so I'm wondering if I'm hampering growth by not keeping my insulin at least moderately elevated.

thanks

If you say that you're making good progress, I wouldn't screw with it. If you're purely interested in gaining, I wouldn't overthink yourself into cutting back. But if you feel like you're gaining more fat than you'd like, cutting back on the carbs (prob. not the pro or fat) on non-lifting days wouldn't kill you.
