Use on non-workout days will be up to you...... if you only want energy boost in the gym, don't worry about using it on non-workout days. I would strongly suggest using it daily however. The results that build up are quite nice. At minimum go 2 caps on non-workout days.
I use RPM 2x/day on workout days. 1x/day on non-workout days.

I've been using RPM now for some time and I only take 2 caps in the morning and that's all. The response curve for my body is very smooth and the effects last for some time.
I just got a new tea product (Tea-3) that has some caffeine from green tea, yerba mate, and oolong tea and I may have to adjust the dosage to one cap. I'd imagine that when Drive comes out, I'll be doing 2 Drive caps and 1 RPM cap/ 2x per day. I like getting the most out of my workout, but I also don't like jacking myself up for each session with by doubling up on caffeine and other stims. One becomes so reliant on it that he or she can't perform a good workout without it.

I am ordering 3 bottles of RPM on Friday. I was thinking of taking it with Leviathan but read where it is also a stim and you should not take to much stims together. Why is this? Also what would be a good fat burner to mix with RPM if I do not take Leviathan.
