If you keep the weight on your chest, you need to make sure that it is adding to your body weight and you aren't subtracting the addition by support of your arms. Keeping your arms in an "X" pattern is most suitable in my opinion (over holding the sides). When the weight is held overhead you are working supporting muscle groups (delts and triceps) and can be helpful in strengthening your core due to your need to stabilize. I wouldn't use a weight though unless I was on a decline bench due to RoM limitations when prostated on the ground (for crunches, a weight overhead during leg-lifts is another story entirely).
