Just threw this concoction together, and it's pretty damn good. Take two cups of brown rice (minute or regular) and cook them. Then take two large chicken breasts, and put them in a pan with some olive oil. Put the stove on medium, and spice them with salt, pepper, cumin, cayenne pepper, black pepper, garlic powder, and onion po.wder. Cook thoroughly.
While the chicken is cooking cut up some green pepper, red pepper, and onions. When the chicken is almost done, add these in. When the chicken is done remove from the pan. Add 1 1/2 cups of chunky salsa, and one cup of water to the pan with the veggies in it. Bring to a boil.
Then add the rice, reduce to low and simmer for 5 minutes. While it's simmering I cut up the chicken into small pieces. After 5 minutes add the chicken, mix and then simmer for another few minutes. I don't know the exact macros for it but its definitely high protein, high good carbs, and moderate in cals ( around 700 calories).

COOK TIME: 25 min
