If you have vilisitol and enzymes with casein will that make it a faster acting protein and defeat the purpose it

Not at all, don’t overthink it. The enzymes will help avoid digestives issues such as gas, bloating etc not effect the digestion time from the individual sources (at least not significantly).

Yes. I have not seen any research that indicates digestive enzymes significantly impacts the release timing of different protein sources.
