Anyone have chicken salad recipes?

I've been eating tuna a lot lately w/ mayo, celery, and hard boiled eggs. I make a large batch once a week and eat some of it just about every day.

Just wondering if anyone had a good simple recipe like this for canned chicken. Thank you.
 
salads are so easy, you can do so much with them

grab some lettuce (romaine/cos) tear that up, throw it in a large bowl
then here comes the creative part, you can add any vegies you want
here are a few popular ones...
-onions (Get salad onions, they are purple)
-red peppers/capsicums
-spinach
-tomatoes

after that you can add some walnuts if you like, they really go well in salads

then for the dressing, if you wanna keep it light, just add balsamic vinegar, however you can mix in some olive oil too... heres a great dressing recipe...

Ingredients


  • 50 ml olive oil
  • 20 ml balsamic vinegar
  • one teaspoon Dijon mustard
  • salt (optional)
  • pepper
  • sugar/splenda (optional)
Use an old jam jar - pour the olive oil + balsamic vinegar into the jar. Add some salt, pepper and a tiny bit of sugar. Add one teaspoon of Dijon mustard. Close the jar and shake it well - finished! Keeps in the fridge for a couple of days if you want to make a bit more.
 
I usually make chicken salad with chopped celery, fresh ground pepper, tspn of garlic powder, fresh chopped onion and some tomato.
 
normally i'll take some chicken... grill it up and put in some greens.. sounds a bit hard core but i say we only live once!
 
sweet pickles makes a great addition to chicken/egg salad also coleslaw dressing tastes good in there too (lots of restaraunts use coleslaw dressing), personally i like jalapenos or banana peppers in mine, its really all about being creative and throwing things you like in cause tons of stuff goes well with this.
 
I make a mexican flavour chicken salad myself, which I've really grown to look forward eating. I season my chicken with cajun seasoning during the grilling process. In the salad I use spinach, vinegar, olive oil, and a few spoonfuls of salsa. Other additions I'll throw in include onions, peppers, and cucumbers. I top the chicken off with a slice of fat free cheddar cheese, and microwave the salad for a few minutes to soften/cook the spinach.
