I used to run straight keto diets back in the day (meats+cheese = what a healthy lifestyle LOL), along with the anabolic diet version at one point.
I never noticed any "water weight" gain from the BLOCKS of cheese I was eating.
If it is ONLY based upon cheese's relatively high sodium content, well, the sodium content of Deli meat (heck, almost any "prepared meal") is MUCH worse.
