Apple Cinnamon Roll Muffins

  1. Apple Cinnamon Roll Muffins


    6 egg whites
    1 1/2 apples
    2 tbsp fat-free yogurt
    3 tbsp peanut butter
    40g oat flour
    40g oats
    40g almond flour
    25g coconut flour
    40g quinoa flour
    2 tsp cinnamon
    1 cup stevia
    5 scoops vanilla protein powder
    1tsp flax seeds

    Preheat oven to 350. Mix wet ingredients in bowl. Grind apple to chunky apple sauce and mix with wet ingredients. mix all dry in a bigger bowl. Mix well, then add wet ingredients and mix until smooth. (should be sticky and run slowly off spoon) pour into muffin tray and bake 8-10 min.

    Serving: 1 muffin

    Total Fat 10g
    Carbs 25g
    Protein 21g
