most of the recipes I've read concerning pancakes don't taste anything like "real" pancakes. Some are as lame as mixing protein with water and pouring on a griddle. Sorry, but I just can't choke those down. So I've been tweaking this recipe for a couple of months, and found a mix that tastes exactly like real pancakes, with a great profile.
1 cup whole wheat flower
2 scoops vanilla protein
3.5 teaspoons baking powder
.25 teaspoon baking soda
dash of salt
1 tablespoon splenda
cinnamon to taste
1 cup water
3 tablespoons applesauce (unsweetened)
sift the dry ingredients first, then add everything else, mix and pour onto griddle.
This should make two batches, one of which is great to take to work in a ziploc bag for killing the sweet tooth that comes mid-day. On cheat days, I add a handful of chocolate chips (I still get my protein and good carbs while cheating).
After a workout, top with natty pb.
All carbs are from the natural applesauce (very little) and the whole wheat flower... so they are very low gi
The only fat comes from the one egg yolk, which is broken up over two servings.
Enjoy (they taste like IHOP pancakes!!!)
