Bell Pepper Salad

    Bell Pepper Salad


    This is a great tasting reciepe I made. A little heavier on the carbs than I would like but still a great lunch or snack item.
    Ingredients:
    orange, yellow, red, green bell peppers total of 4
    whole avocado
    1 onion or about 7 green stick onions
    about 1/4 cup of parsley or another fresh green you like.
    1 cup low fat sour cream
    1/2 cup low fat mayonnaise
    chipotle seasoning
    regular ground pepper
    salt

    Cut 1 bell pepper in half long ways, clean out the seeds. This is your bowl.

    Dice the remaining bell peppers, avocado without skin, onions, parsley, into large bowl and mix gently. do not cut the avocado to small it is a great taste in large chunks.
    Add about 1 1/2 teaspoons of ground pepper
    Add about 1 teaspoon of salt
    Mix contents well and set aside.
    In a seperate bowl mix your sour cream and mayonnaise together, you can adjust the amounts to get your desired flavor, I like the acidity of the sour cream so I add a little more of it.
    Mix into the mixture about 2 teaspoons of chipotle seasoning or powder. Add a little more or less depending on spice preference.
    Mix your vegetable mix with your dressing mix and spoon into pepper bowls.
    Enjoy! Makes about 4 servings.

    Ive always had a thing for bell peppers myself. This will be a great addition to my recipe book! Thanks!

    PS...did anyon ever create that book or whatever was discussed quite some time ago? I had some time off shortly after it was discussed, and forgot about it.
