    Potatoes are one of those a ha! vegetables.

    Asked to name a fruit or vegetable high in potassium, most people instinctively choose the banana. But a baked potato has 610 milligrams per serving, versus 422 milligrams for a medium-size banana.

    The government recently upped the recommended daily intake of potassium for adults from 3,500 to 4,700 milligrams because a diet low in potassium and high in sodium is a major contributor to high blood pressure and stroke.

    Another a ha! moment: A potato the size of a computer mouse also supplies 45 percent of the recommended daily value of vitamin C.

    Although potato sales plummeted during the Atkins diet craze, the tubers are loaded with positive attributes. They're low in calories, high in minerals and a good source of complex carbohydrates, dietary fiber, iron, niacin and vitamin B6. They're also economical and easy to prepare.

    The only downside is that it's tempting to serve them with fatty and caloric toppings. Choose wisely.

    Of course, one question remains: Do you have to eat the skin to get the health benefits? It's your call, but the skin is rich in fiber and iron, as well as caffeic and ferulic acids that may help destroy harmful carcinogens in the body.

    I hate potatos personally. They taste like dirt and this story probably originated in a press release from some state potato commission....but it's a good reminder that all vegetables can be good for you as long as you balance things right.

    I love potatos save for having the GI of table sugar. I'll take sweet potatos if given the choice.

    Potatoes are a staple of my diet. I love their taste in every possible form. They give me a sense of well being. I usually add some fat to lower the GI effect. They' re also the reason I am at 14-12% body fat, shredded or happy the choice gets easier every year!

    Sweet potatoes have all those benefits plus I think they taste better. I like to microwave a sweet tater until nice and soft, then split it open and top with some chicken chunky chili!

    or a nice sweet tater dessert:
    -mash a medium sweet potato in a pyrex dish (use nofat cooking spray)
    -in a bowl combine 1/3 to 1/2 cup oats, a few egg whites and a scoop of your favorite protein powder (vanilla or chocolate prefered) then add just enough water to get it to mix all together.
    -pour the "mix" over the sweet potato and top with cinnamon and splenda
    -bake @ 350 for 30-45 min or until the oatmeal crust is nice and crispy. Sometime I broil it for the last few minutes to get a real crispy crust. Top with some chopped pecans or almonds.

    I eat a potatoe 2 times a week. The rest is all sweet potatoes. The sweet potatoes taste a lot better now that I am used to it, and it's lower GI!
