Carrots, mushrooms, tomatos, spinach are best eaten cooked vs raw for nutrient value?

  1. Carrots, mushrooms, tomatos, spinach are best eaten cooked vs raw for nutrient value?


    I read that recently in a blog. Is it correct? I typically eat all of the above daily in a salad raw.
    I should be cooking them? Blanching I think is more accurate. Just enough to release their chemicals and not too much so that the value is destroyed.

  2. I remember reading a similar article about how vegetables need to be cooked to get all the nutrition out of them, that was years ago that I read it also.

    Anyways I eat vegetables both ways
